Cannabis Creations

My name is Keena Moffett, and I am a renaissance woman! I am a business professional and fellow entrepreneur, as well as a creative and artist. I have had the pleasure of owning my own commercial bakery, being a professional photographer and also being an author of one of the first cannabis cookbooks to focus on removing the “stoner” stigma from the use of the plant. I wrote  “Cannabis Creations: Beyond the Brownie” in 2016, and I’m so happy that I did. Many people have shared with me how learning through my cookbook helped them more easily medicate.
I am a cannabis brand strategist who is constantly inspired and excited by all of the amazing cannabis entrepreneurs and business owners who allow the plant to shine in all of its magnificence.  As a creative director and photographer, it’s my job to help businesses and brands create an identity that feels authentic to them, and bring their vision to life for their customers.

Peekeers: How long have you been cooking? How long have you been cooking cannabis-infused dishes?
Keena: I started learning to cook and bake right around the time I was pregnant with my daughter (2005) because I was obsessed with the idea of how having a daughter meant that I needed to learn to cook from scratch so that I could teach her. I have been cooking and baking with cannabis specifically for about 3yr.
Peekeers: What’s your favorite go-to meal for a special night? Why?
Keena: The Chocolate Lava Cake recipe I shared is my favorite date night dessert, because it’s super quick and easy to make, but looks and tastes fancy!
Peekeers: Do you have any suggestions for wine pairings for this meal?
Keena: I’m not a big wine drinker, but I love a good red dessert wine with my lava cakes.
Peekeers: Are there any vegan or vegetarian variations available?
Keena: I always say give it a try when it comes to cannabis cooking, and just have fun with it. With this particular recipe; you could swap coconut oil for butter and maybe a powdered egg substitute.
Peekeers: Are you culinary trained or self-taught?
Keena: A little bit of both; I started training in culinary techniques, but ultimately became self-taught.
